The resulting vinegar is aromatic, lightly floral, smoky, and smooth, with hints of apricot and almond. Drizzle over grilled veggies, fish or tofu, or blend with O Extra Virgin Olive Oil and chopped shallots for a smooth spin on a classic vinaigrette.
